Ginger Beer

One of the things I did when I traveled around the Caribbean and South America as a girl was pick up recipes. This is one from Guyana.

1 lb ginger, grated
1/2 orange
3 lb brown sugar
1 gal. water
a few cloves
1/4 pint rice

Put all ingredients into a clean jar. Add orange juice and rind to the mix. Stir until sugar is dissolved. Cover jar and leave for two days. On the third day, strain through a thin muslin and bottle. Service with cracked ice.
